Cajun omelet with shrimp, that sounds amazing. Best omelet I ever ate was in Lousiana. Crawfish tails, green onion and swiss cheese. Outstanding!

Ramakin eggs, you may have to adjust the timing a bit, butter a ramakin dish, break an egg into it and season. Place the ramakin dish in a shallow tray of water. Place several rashers of bacon (streaky, my fav) in another tray with some oil in (or lard).
Put both trays in the oven with a pitta bread on a shelf, set the temperature for 180C, set the timer for 10 mins before you get up, wake up to breakfast, hopefully of gooey eggs, crispy bacon and hot pitta to scoop it all up with. A timer on the coffee maker just adds to it all.
